Soup is what happens gone I have leftovers in the house and its time to certain out the veggie drawer. I got the inspiration while lunching at the Palm Tree Grille in Mount Dora in the same way as attending the annual Plant and Garden Sale. I didnt have their soup but it was re special. This will be gigantic for lunches during the week.

  1. 2 tablespoons olive oil
  2. 1 onion, chopped
  3. 1 cup diced carrots
  4. 1 cup diced celery
  5. 2 cloves garlic, minced
  6. 1 cup baby spinach leaves
  7. 4 cups 99% fat-free chicken broth
  8. 1 (15 ounce) can diced tomatoes
  9. 1 lemon, juiced
  10. u00bc teaspoon field black pepper
  11. u00bc teaspoon dried oregano
  12. u00bc teaspoon dried sweet basil
  13. 2 cups diced cooked chicken
  14. 1 cup cooked white rice

  1. Heat olive oil in a large pot more than medium heat. build up onion, carrots, celery, and garlic; cook and toss around until onion is translucent, practically 5 minutes. protest in baby spinach.
